Easy Coconut Martini Mocktail Recipe – Refreshing!

This Easy Coconut Martini Mocktail Recipe is icy and creamy, and it feels very sophisticated and tropical all at once! Five simple ingredients blend into a perfect non-alcoholic martini. All you need is a cocktail shaker, the ingredients, and a martini glass!

I grew up in Miami, Florida, and cracking coconuts open to drink sweet coconut juice was a favorite activity. The white coconut meat was so fresh and delicious! This was way before drinking coconut water was a ‘thing’! Your options to crack a coconut involve removing the husk and throwing the hard coconut shell on the street to crack it open or hitting it with a hammer. If you want to drink the coconut water first, you can pry open the soft coconut eyes and sip the sweet coconut water.

I love the taste of coconut, and when Steve and I go to Maui, I always order a Chi Chi without pineapple juice. I have been making Mocktails lately, which got me thinking about how to construct a virgin coconut Martini. If you haven’t ventured into Mocktails yet, a ‘Mocktail’ is a mixed non-alcoholic cocktail. On nights when you want something adult and refreshing but don’t want alcohol, it’s a lovely alternative. Mocktails are also having a ‘moment’! A lot of restaurants now offer Mocktails on their menus. I was at El Dorado Kitchen in Sonoma Saturday, and we went wine tasting before dinner. I didn’t want another glass of wine, so I ordered a Mojito Mocktail. It came to the table all fancy, and everyone wanted a taste. It was delicious!

5 Simple Ingredients

You will need the following ingredients for this non-alcoholic Coconut Martini Mocktail. A printable recipe card is at the bottom of the post.

  • Organic Creamy Coconut Milk – I used Full Fat Organic Guar Gum Free Coconut Milk
  • Pelligrino, Club Soda or any Sparkling Water – This is an excellent substitute for alcohol in this mocktail. 
  • Ice
  • Maple Syrup – This added a touch of sweetness without being overpowering
  • Limejuice of a fresh lime

I also used a classic Martini Shaker. That just added to the whole vibe.

How To Make This Easy Mocktail

  1. Blend Coconut Milk in a high-speed blender until creamy.
  2. Place 1 cup of Blended Coconut Milk, 2 Cups of Ice, 2 Tablespoons of Pure Maple Syrup, and 2 Cups of Sparkling Water with the Juice of 1/2 Lime in a Cocktail Shaker. Shake for a minute and then strain the mixture into 2 Martini Glasses.

Variations on this Mocktail

  1. Make it into a Pina Colada Mocktail by adding Pineapple Juice instead of Sparkling Water.
  2. You can use Coconut Water for a lighter version of this drink.
  3. You can also omit the Maple Syrup or use Honey Instead
  4. If you add some crushed mint, it’s a Coconut Mojito Mocktail!
  5. Add some cucumber slices and make a Coconut-lime Cucumber Mocktail
  6. You could also add a splash of non-alcoholic ginger beer.

Can you make a Keto Version of this Mocktail?

Yes! If you would like a Low-Carb Coconut Martini Mocktail, leave out the Maple Syrup. You can add a bit of Stevia for more sweetness.

Instructions

Buy the best coconut milk possible. I used Organic Guar Gum Free Unsweetened Coconut Milk. I blended it in a high-speed blender, so it was beautifully creamy.

Place 1 cup of Blended Coconut Milk, 2 Cups of Ice, 2 Tablespoons of Pure Maple Syrup, and 2 Cups of Sparkling Water with the Juice of 1/2 Lime in a Cocktail Shaker. Shake for a minute and then strain the mixture into 2 Martini Glasses.
