The consistency is not the same; if you taste many ricottas, you will notice the difference. I love Organic Valley. I also look for imported Italian ricotta, usually free of fillers.

  • Whole Milk Fresh Ricotta Cheese – buy the BEST!
  • Honey – Look for local honey
  • Olive Oil – Adds a creamy texture
  • Chopped Pistachios – that salt against the sweet – Yum!
  • Fresh Figs
  • Apples
  • Pears
  • Strawberries
  • Grapes
  • Medjool Dates
  • Baguette Sliced
  • Crackers
  • Optional – Italian Cookies

  • For best results, buy the best ricotta possible
  • Any fresh fruit can work for your platter!

How To Make Whipped Ricotta

  1. Put Ricotta, Olive Oil, and Honey in a High-Speed Blender or Food Processor.
  2. Blend until smooth and creamy, about 2 minutes. Scrape down the sides of the blender, if needed, with a rubber spatula.
  3. Remove from the blender with the rubber spatula and place in a serving bowl. Cover bowl and keep chilled until serving. Drizzle with Pistachio Nuts and Honey.
  4. On a large wooden board or serving board, place the bowl of creamy ricotta in the middle and surround the bowl with the fresh fruit, crackers, and sliced baguette. You can add a bowl or two of various nuts and some chilled wine, and you have a beautiful appetizer ready to enjoy with your guests. If you have a large group, you can keep a second bowl of the ricotta dip chilling.

Notes

We love serving this at dinner parties for dessert. It’s always a hit!

*If preparing beforehand, keep the sliced apples and pears in a bowl with 1/2 lemon squeezed into enough water to cover the fruit.  Prevents oxidation.
