Ingredients

  • 1 Cup Organic Coconut Milk – I used Full Fat Organic Guar Gum Free Coconut Milk
  • 2 Cups Pelligrino or any Sparkling Water – This is an excellent substitute for alcohol in this mocktail.
  • 2 cups Ice
  • 2 Tablespoons Maple Syrup – This added a warm sweetness without being overpowering
  • 1/2 Lime – juice of a fresh lime

Instructions

Buy the best coconut milk possible. I used Organic Guar Gum Free Unsweetened Coconut Milk. I blended it in a high-speed blender, so it was beautifully creamy.

Place 1 cup of Blended Coconut Milk, 2 Cups of Ice, 2 Tablespoons of Pure Maple Syrup, and 2 Cups of Sparkling Water with the Juice of 1/2 Lime in a Cocktail Shaker. Shake for a minute and then strain the mixture into 2 Martini Glasses.

Notes

    • Serve with a lime wedge and cocktail accessories.

    • Serve with fresh pineapple wedge

    • Add some decorative tropical napkins

    • Rim the glass with coconut sugar for an extra wow factor
