Can you use Chicken Breasts or Chicken Legs instead of Chicken Thighs?
YES! BUT- I would marinate the chicken breasts for at least 30 minutes as chicken thighs have more fat. You can also sub chicken legs.
How To Make This Recipe
Make the Honey Turmeric Marinade: Whisk the Olive Oil, Coconut Aminos, Minced Garlic, Turmeric, Pepper, and Honey until smooth and creamy.
Pour Marinade over the Chicken: You can marinate the chicken in large ziplock bags or pour over the chicken in a large glass bowl which is how I did it. If marinating for over 20 minutes, please refrigerate the chicken.
Bake the Chicken: Place marinated chicken in a 425-degree oven in the middle rack and cook for approximately 30 minutes until the thickest part of the chicken temps at 165. I turned the chicken halfway through to ensure even cooking.
SERVE – Serve with roasted broccoli as above or any veggie side. I squuezed the lemon over the chicken before serving to add brightness! We also made homemade coleslaw.
HELPFUL TIP – You can double the marinade and use some as a marinade for roasted vegetables. I poured a few tablespoons over the broccoli before roasting.
