I wanted to up the health factor of these tuna burgers, so I added some chopped red peppers, celery, and onions and used a whole grain cracker for the breadcrumbs. This is something you can also do with Salmon Patties or Turkey Burgers. Onion adds moisture and deep flavor. The Red Bell Pepper added a subtle sweetness. I served these with Dijon Honey Coleslaw, which added that lovely crunch. You will love making these easy tuna burgers! Ingredients in this Mediterranean Tuna Burger
- Albacore Tuna – I used Wild Planet.
- Chopped Yellow Onion
- Chopped Red Bell Peppers
- Chopped Celery
- Ground Whole Grain Crackers – I also used Gluten Free but regular work.
- Garlic Powder
- Eggs
- Fresh Squeezed Lemon Juice
- Salt and Pepper
Ingredients for Dijon Honey Coleslaw
- White Cabbage
- Red Cabbage
- Shredded Carrots
- Dijon Mustard
- Mayonnaise
- Lemon
- Honey
- Pepper
How to Make This Quick, Easy Tuna Patty Recipe
Step 1 –
Grind the crackers in a high-speed blender. I used a baked, gluten-free cracker. Any crunchy crackers will do. You can also use Gluten -Free or regular Panko.
Step 2 –
Chop Tuna into Small Pieces. Make sure there are no large pieces. Break up the canned tuna with a fork.
Finely Chop Onions, Celery, and Red Bell Pepper.
Whisk Eggs.
Squeeze Juice of 1/2 of a Lemon.
Add Garlic Powder, Salt, and Pepper.
Step 3 – Assemble Patties
Blend all ingredients for the Tuna Patties until well combined.
Scoop 1/2 Cup of Mixture into your hand, roll, and press into a Tuna Burger shape.
Place Tuna Patties on a Plate and refrigerate for 20-30 minutes. This helps them to stay together while frying.
While Tuna Patties are in the refrigerator, prepare the homemade Slaw.
SLAW RECIPE
This easy slaw recipe consists of the following:
2 Cups Shredded White Cabbage
1 Cup Shredded Red Cabbage
1 Cup Shredded Carrots
1 Tablespoon Mayonnaise – I used Sir Kensington
1 Tablespoon Dijon Mustard – I used Grey Poupon
1 Teaspoon Honey – Add more to taste if you like it sweeter.
Juice of a 1/2 Lemon
6-7 Turns from a Pepper Mill to finish.
Combine everything in a large bowl and mix well.
Makes 4 – 1 Cup Servings
Step 4 – Saute Healthy Tuna Patties in Olive Oil
Preheat a non-stick frying pan to medium-low heat. Add 1-2 Tablespoons of Olive Oil. Saute Tuna Patties for approximately 3 minutes on each side until golden brown. Turn Tuna Patties carefully with a large spatula and spoon flipping gently. Remove from heat and serve with Coleslaw. Top Patties with Mayo and Scallions or offer on the side!
