Roasted Cherry Tomatoes and Garlic Recipe

Easy roasted cherry tomatoes with herbs and garlic as a perfect side dish or over pasta!

This easy roasted cherry tomatoes and garlic recipe is the perfect accompaniment for penne pasta. This delicious dish has been in our Mediterranean Diet arsenal for years. It’s simple to make and fills your house with a delectable aroma. What makes this dish notable are the fresh herbs and lots and lots of garlic. Cherry tomatoes are inexpensive, and this dish can be prepared in under 30 minutes! According to the book Cooking Ingredients, ‘cherry tomatoes were once treasures of Gardners but are now readily available year-round.’ Cherry tomatoes naturally burst with flavor, even more so when you roast them to bring out their sweetness. Also, this recipe is packed with antioxidants, lycopene, and anti-inflammatory goodness!  All essential for an inflammation-busting protocol!

Ingredients for Roasted Cherry Tomatoes and Garlic

  • 3 – 4 pints Cherry Tomatoes (We love mixing red and yellow)
  • 10 cloves of sliced Garlic
  • 3 tablespoons good Olive Oil
  • 2 tablespoons fresh Rosemary plus extra for garnish
  • 5-10 leaves of fresh Basil
  • Salt and Pepper to taste
  • Optional Pasta Penne per package directions

How to Make Roasted Tomatoes

Preheat your oven to 400 degrees.

Place all of your tomatoes in a large glass bowl.  Sprinkle liberally with olive oil.

Add the sliced garlic, rosemary, salt, and pepper. Basil will be added last after the tomatoes come out of the oven.

Add the tomato mixture to a large, heavy baking sheet.

Place tomatoes on a lower rack and cook for 20 minutes or until tomatoes are bursting as in our picture.

We served our Roasted Cherry Tomatoes with Pasta and Ricotta

or you could add some salmon!

The beauty of this recipe is its ease and versatility. Add some grated parmesan like my Steve if your guests are not sensitive to aged cheese. I chose to have mine with ricotta.

This would be delicious with Chicken and Herbs de Provance, which serves a crowd.

Storage Tips –

Are guests coming tonight? This is a great make-ahead recipe.

This also keeps well in the refrigerator for a day or two. We toss our pasta with the tomatoes, and it’s ready to eat the next day!

  • 510 leaves of fresh Basil
  • Salt and Pepper to taste
  • Optional Pasta Penne per package directions
  • Optional Ricotta Cheese

Instructions

Preheat your oven to 400 degrees.

Place all of your tomatoes in a large glass bowl.  Sprinkle liberally with olive oil. Toss to mix well.

Add the sliced garlic, rosemary, salt, and pepper. Basil will be added last after the tomatoes come out of the oven.

Add the tomato mixture to a large, heavy baking sheet. Spread evenly. Sprinkle with fresh ground pepper and sea salt to taste. You can add more pepper after the dish is cooked.

Place tomato mixture on a lower oven rack and cook for 20 minutes or until tomatoes start to burst, as in our picture. Be careful not to overcook!

Remove from oven and transfer to serving dish. If serving with pasta, you can add your cooked pasta to the bowl, cover it with the roasted tomatoes and add fresh basil and several scoops of good ricotta.

Notes

Serving Option: Serve with penne pasta, ricotta, and fresh basil. This recipe is also delicious with fish or chicken. It keeps well in the refrigerator overnight.

Pasta Serving Note – Put cooked pasta in a large serving bowl. Top with fresh basil and several scoops of good ricotta. The heat from the pasta and juicy tomatoes will melt the cheese, making a creamy, lovely sauce.
