Easy Ultimate Roasted Cherry Tomatoes with Garlic and fresh herbs is a perfect side dish or over pasta! This easy recipe is a beautiful example of how the Mediterranean Diet shines at its best. When you slow-roast the tomatoes with garlic cloves, these little flavor bombs develop delicious flavor during roasting. The garlic cloves get sweet, and this luxurious addition to pasta is topped on a baked crostini with parmesan. This is our favorite cherry tomato recipe!

Ingredients

Units Scale
  • 4 pints of yellow and red Cherry Tomatoes
  • 10 cloves of sliced fresh Garlic
  • 3 tablespoons good Olive Oil
  • 2 tablespoons fresh Rosemary plus extra for garnish
  • 510 leaves of fresh Basil
  • Salt and Pepper to taste
  • Optional Pasta Penne per package directions
  • Optional Ricotta Cheese

Instructions

  1. Preheat your oven to 400 degrees.
  2. Place all of your tomatoes in a large glass bowl.  Sprinkle liberally with good olive oil.
  3. Add the sliced garlic, rosemary, salt, and pepper. Basil will be added last after the tomatoes come out of the oven.
  4. Spread the tomato mixture onto a large, heavy-rimmed baking sheet in an even layer. You can also use a large cast-iron skillet or roasting pan.
  5. Place tomatoes on the middle rack and cook for 20 minutes or until tomatoes are bursting, as in our picture. Be careful not to overcook!
  6. Remove from oven and transfer to serving dish. If serving with pasta, you can add your cooked pasta to the bowl, cover it with the roasted tomatoes and add fresh basil and several scoops of good ricotta.

Notes

Serving Option: Serve with penne pasta, ricotta, and fresh basil. This recipe is also delicious with fish or chicken. It keeps well in the refrigerator overnight.

Pasta Serving Note – Put cooked pasta in a large serving bowl. Top with fresh basil and several scoops of good ricotta. Add hot roasted tomato mixture. The heat from the pasta and juicy tomatoes will melt the cheese, making a creamy, lovely sauce.
