A dear friend made this incredible shrimp recipe she discovered in Bon Appetit magazine on her outdoor barbecue. Her husband cooked the shrimp on the grill and served them with poblano peppers. So good! It was a beautiful summer night under the stars, and this meal was one to remember!

My husband Steve and I deconstructed this shrimp recipe to bake in the oven, and wow, it is fantastic! This would be perfect for a dinner party or served as a football or summer party appetizer. Everyone makes yummy sounds when they eat it! It’s one of those recipes that looks complicated but isn’t. On top of that, it’s a Mediterranean diet-style recipe full of tasty goodness.

Ingredients for Shrimp Sheet Pan

  • ¾ cup olive oil
  • 3-4 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 5 teaspoons paprika
  • 4 teaspoons sherry wine vinegar
  • ¾ teaspoon salt (if on a low salt diet, omit)
  • ½ teaspoon pepper
  • ½ teaspoons dried crushed red pepper
  • 12 uncooked extra-large shrimp (21-25)
  • 4 fully cooked apple smoked chicken sausages, sliced (about 12 oz)
  • 12 cherry tomatoes
  • ½ a red onion, cut into wedges
  • 1 red pepper, chopped

Step-by-Step Instructions for Baked Shrimp with Polenta

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Prepare the glaze by combining the oil, garlic, thyme, paprika, vinegar, salt, and pepper into a small bowl. Set aside half of the glaze to use later.
  3. Combine the shrimp, sausage slices, tomatoes, onions, and red peppers into a medium bowl. Drizzle the glaze over and stir until all the ingredients are coated.
  4. Line a baking sheet with parchment paper. Pour the glaze-coated ingredients onto the sheet pan and spread evenly so nothing overlaps.
  5. Bake for 8-10 minutes. No need to flip the shrimp!
  6. Once fully cooked, serve over creamy polenta and drizzle more glaze. Enjoy!

Tips and Substitutions

  • You can leave out the sausage and use another veggie such as broccoli
  • Any sausage will work. We also love chicken apple sausages
  • Use the largest shrimp you can find. Costco often has 21-25 size bags of frozen shrimp.
  • Toss with your favorite cheese such as feta cheese or parmesan cheese
  • Place a block of parmesan cheese on the table so guests can add to the polenta

Storage and Reheating

  • Store leftovers in an airtight container for up to 4 days
  • Reheat in the microwave for one to two minutes or saute until warm over a low flame
