Summertime always reminds me of Tuna Patties. Simple, healthy, and so good for you! This delicious, simple healthy tuna patty recipe is so easy to make. It’s a quick, tasty meal with ingredients in your pantry.

Ingredients

2 Cans Wild Planet Albacore Tuna – Drained and Chopped

1/2 Cup Ground Crackers or Panko (GF or Regular)

1/2 Cup Finely Chopped Bell Pepper

1/2 Cup Finely Chopped Celery

1/2 Cup Finely Chopped Yellow Onion

2 Eggs Whisked

1/2 Teaspoon Garlic Powder

1/2 Teaspoon Fresh Ground Black Pepper

Juice of half a Lemon

2 Tablespoons Olive Oil

Mayonnaise as a condiment

1/4 Cup Chopped Scallions as a side condiment

Instructions

Step 1 – Grind the crackers in a high-speed blender. I used a baked, gluten-free cracker, but crunchy crackers will do. You can also use gluten-free or regular Panko.

 

Step 2 – Chop the Tuna into Small Pieces, ensuring no large pieces. Break up the canned tuna with a fork. Finely Chop Onions, Celery, and Red Bell Pepper. Whisk Eggs. Squeeze the Juice of half a Lemon. Step 3 – Assemble Patties

Mix all ingredients for the Tuna Patties in a large bowl until well combined.

Scoop 1/2 Cup of Mixture into your hand, roll, and press into a Tuna Burger shape.

Place Tuna Patties on a Plate and refrigerate for 20-30 minutes.

While Tuna Patties are in the refrigerator, prepare the homemade Slaw.

Step 3 – Saute Tuna Patties in Olive Oil

Preheat a non-stick frying pan to medium-low heat.

Add 1-2 Tablespoons of Olive Oil.

Saute Tuna Patties for approximately 3 minutes on each side until golden brown.

Turn Tuna Patties carefully with a large spatula and spoon flipping gently.

Remove from heat and serve with Coleslaw.

Top Patties with Mayo and Scallions or offer on the side! 

SIDE SLAW RECIPE

This easy slaw recipe consists of the following:

2 Cups Shredded White Cabbage

1 Cup Shredded Red Cabbage

1 Cup Shredded Carrots

1 Tablespoon Mayonnaise – I used Sir Kensington

1 Tablespoon Dijon Mustard – I used Grey Poupon

Juice of 1/2 Lemon

6-7 Turns of a Pepper Mill 

Combine in a serving bowl. 

1 Teaspoon Honey – Add more to taste if you like it sweeter.

6-7 Turns from a Pepper Mill to finish.

Combine everything in a large bowl and mix well. M

Makes 4 – One Cup Servings Servings
