Butterfly each chicken breast on a cutting board, slicing it through so you are left with four thin pieces of chicken breast. Pat each piece of chicken with a paper towel.
Salt and pepper each piece of chicken generously. Add the gluten-free flour to a shallow bowl, then place each piece of chicken into the bowl and coat thoroughly with the flour.
Heat a large skillet over medium-high heat. Add 3 tablespoons of butter and the olive oil. Let the butter and olive oil melt together.
