This healthy Homemade Rice Krispie Treats without Marshmallows Recipe is delicious! This is an easy recipe you can make and have ready in your refrigerator whenever you want a snack. I used Tahini, but you could also use your favorite peanut butter or almond butter, Honey, Brown Rice Crisps, and Sesame Seeds. The rice krispie treats are crunchy, chewy, and subtly sweet. It’s a perfect healthy treat!

Ingredients

Units Scale
  • 8 cups Brown Rice Crisps
  • 1 cup Tahini – use an all-natural creamy Tahini
  • 1/4 cup Sesame Seeds – to press on top
  • 1 cup Honey
  • 1/2 Teaspoon Vanilla
  • Optional – Add 1/2 Teaspoon of Sea Salt

Instructions

  1. Line an 8-inch square baking pan with parchment paper. This will make it easy to remove the bars after they have chilled.
  2. In a small sauce, bring the honey to a boil over medium heat and then immediately lower to a simmer for one minuteTurn off the flame and add the tahini and vanilla, combining thoroughly. You can also heat in the microwave in a microwave-safe bowl.
  3. Pour the Tahini-Honey mixture over the Rice Crispy Cereal. Add optional sea salt. Combine the cereal mixture. It is thick and sticky.
  4. Transfer the Rice Krispie Mixture to the prepared pan and press down hard on it evenly. You want it to become compact. I used the back of a mixing cup to press the mixture down. Sprinkle the top with a layer of sesame seeds and press again.
  5. Cover with a piece of parchment paper and place pan in the refrigerator for several hours until completely firm. I also wrapped the top in plastic so it was airtight.
  6. Remove from refrigerator and slice into crispy squares.
  7. Keep bars refrigerated or frozen. I wrapped each bar in parchment in a baggie or covered glass bowl. You can also wrap each bar in plastic wrap for easy transport.

Notes
