Chocolate Cherry Chia Pudding with Coconut Milk Parfaits are creamy and chocolaty, layered with coconut whipped cream and simple homemade cherry compote. This lovely chia recipe is special enough to serve guests or as a delicious breakfast.

Ingredients

  • 3 cups de-seeded fresh cherries or frozen cherries
  • 1/4 cup chia seeds
  • 2 cups coconut milk or milk of choice
  • 1 cup coconut cream whipped
  • 3 tbsp honey or agave syrup
  • 1/4 cup cocoa powder
  • 1 1/2 tbsp light brown sugar
  • 1/2 teaspoon vanilla
  • Chocolate for sprinkling
  • Grated hazelnuts for sprinkling

Instructions

  1. Add coconut milk, chia seeds, honey, and cocoa powder to a medium-sized bowl or high-speed blender if you prefer blended chia. Mix well until the ingredients are combined and the cocoa powder is lump-free. Place bowl in refrigerator while you make the cherry layer and the chia pudding thickens.
  2. Put the cherries with the sugar and vanilla in a small, deep saucepan. Turn the heat to a low simmer and let the cherries soften and the sugar melt for about 8 minutes, stirring often. Note: Do not overcook the cherries.
  3. Allow to cool completely before assembling the dessert.
  4. Using your favorite glasses or jars, place a layer of the chocolate chia pudding on the bottom, followed by a layer of cherries. Top with whipped coconut cream or your favorite whipped cream.
  5. Sprinkle chopped chocolate and chopped hazelnuts on top!

Tips

  • Cook cherries on low heat until the sugar is melted and the cherries soften
  • If you like blended chia pudding, use a high-speed blender for the chocolate layer
  • Serve in your favorite glasses or glass jars!
