The BEST Chunky, Thai Spiced Gluten-Free Granola Recipe is extra special with huge clusters and warm spices! It comes together quickly and stores well in the freezer. We love making a batch of granola and having it ready for travel and snacks.

Ingredients

1 cup Sunflower Butter or Almond Butter

1/2 Cup Maple Syrup

2 Teaspoons Vanilla Extract

1/2 Teaspoon Sea Salt

2 Cups Old Fashioned Gluten-Free Oats

2 Cups Unsweetened Coconut Flakes

2 Teaspoons Ground Cinnamon

2 Teaspoons Ground Ginger

1/2 Teaspoon Ground Cardamom

1/2 Cup Sunflower Seeds

Instructions

  1. Pre-heat Oven to 325 degrees F. 
  2. Mix Sunflower or Almond Butter with Maple Syrup over very low heat until well blended. Remove from heat.
  3. Add all remaining ingredients to a large mixing bowl. Add Sunflower Butter Mixture. Combine until well mixed.
  4. Spread the Granola Mixture onto a large-rimmed prepared baking sheet. Coat the baking sheet with coconut oil or olive oil before spreading the mixture to prevent sticking. Press the mixture down into an even layer. You can also line the baking sheet with parchment paper for easy clean-up!
  5. Place the pan in a 325-degree oven for 20-25 minutes until it is light golden brown. For best results, do not overbake.
  6. Remove from the oven and let cool to room temperature before breaking your homemade granola into chunks. Enjoy!

Notes

Store in an airtight container for 2-3 days. I recommend storing in an airtight container or plastic bags in the freezer for extended storage.
