Ingredients

Fudge Ingredients:

● 1/3 cup coconut oil

● 1/3 cup maple syrup

● 1/3 cup natural peanut butter

● 1 teaspoon pure vanilla extract

Topping Ingredients:

● 1/2 cup milk or dark chocolate chips

● 1 teaspoon coconut oil

Instructions

1. Add the coconut oil and maple syrup to a small saucepan over medium-low heat. Lower heat to simmer for about 1 minute, stirring often, then remove from heat.

2. Add the peanut butter and vanilla to the saucepan and stir to combine.

3. Pour the peanut butter mixture into a mini muffin silicone pan. You can also use a metal mini muffin pan, but you will need liners to remove them from the pan. Place the mixture into the freezer.

4. While the peanut butter mixture hardens in the freezer, place your chocolate chips and coconut oil in a small bowl and melt in the microwave. Start with 20 seconds in the microwave and stir, then in additional 15-second increments until melted.

5. Once the fudge mixture has hardened enough to put the chocolate on top, remove the chilled peanut butter layer from the freezer and pour the melted chocolate mixture evenly over each fudge.

Notes

Option: Top with a pinch of salt while the chocolate is still wet. We love pink Himalayan Sea Salt for that sweet and salty flavor. Place back in the freezer for at least 30 minutes. Remove from the freezer and pop out of the silicon mold. Enjoy!

Note: Store in the freezer or fridge in plastic wrap in an airtight container, as they will melt. You can freeze in an airtight container for up to 3 months.
