Ingredients

  • 8 pieces of cooked crispy bacon
  • 8 cups diced fresh broccoli florets
  • 1/2 cup dried cranberries
  • 1/2 cup toasted sunflower seeds
  • 1/2 red onion chopped
  • 1/2 cup honey
  • 3/4 cup mayonnaise
  • 23 Tbsp red wine vinegar

Instructions

  1. Preheat the oven to 420 degrees F. Add bacon to a foil-lined pan and bake for 20 minutes (or until crisp). Once cooked, place on a plate lined with paper towels to soak up excess grease, then cut into tiny pieces.
  2. Meanwhile, cut broccoli florets into smaller bite-size pieces and dice the red onion.
  3. Add broccoli, red onion, cranberries, sunflower seeds, and bacon to a large serving bowl.
  4. To make the dressing, add the honey, mayonnaise, and 2 Tablespoons of red wine vinegar to a smaller bowl and whisk to combine. The honey will dissolve, and the dressing should be smooth and creamy.
  5. Taste the dressing. For a more robust flavor, add the remaining 1 Tbsp of vinegar.
  6. Add the dressing to the broccoli mixture and mix to combine. Enjoy!

Notes

  • You can also use Agave Syrup or Maple Syrup instead of Honey
  • Pumpkin Seeds can also be substituted for Sunflower Seeds
  • Omit the bacon for a Vegan broccoli salad
