Add coconut milk, chia seeds, honey, and cocoa powder to a medium-sized bowl or high-speed blender if you prefer blended chia. Mix well until the ingredients are combined.
Put the cherries with the sugar and vanilla in a small, deep saucepan. Turn the heat to a low simmer and let the cherries soften and the sugar melt for about 8 minutes, stirring often.
Allow to cool completely before assembling the dessert.
