Are you a fan of peanut butter and looking for a family and kid-friendly gluten-free granola? The Ultimate Chunky Peanut Butter Gluten-free Granola Recipe is full of peanut butter flavor and is breakfast, delicious snack, and travel-worthy! Only six ingredients.
6 Cups Old Fashioned Certified Gluten-Free Oats – I used Bob’s Mills
2 Cups Organic Creamy Peanut Butter – I used Santa Cruz Light Roast but any Creamy Peanut Butter will work.
1 Cup Peanut Butter Powder – You can also finely grind peanuts in a High-Speed Blender
1 1/2 Cups Organic Honey
3 Teaspoons Pure Vanilla
1 Teaspoon Sea Salt
Pre-Heat Oven to 325 F.
Step 1 -Heat Peanut Butter and Honey in a Saucepan until warm and well combined. Remove from heat.
Step 2 – Combine Dry and Wet Ingredients in a Large Mixing Bowl. Mix thoroughly. I used my hands.
Step 3 – Spread Granola Oat Mixture onto a lightly oiled Heavy Baking Tray. Press down firmly until the Granola is an even layer. You can also lay parchment paper on the baking tray.
Step 4 – Bake for 15 Minutes at 325 F in a preheated oven. Observe so as not to burn it. Remove when light golden brown. As it cools, the granola chunks will harden. Cool completely before breaking apart.
*Serve with milk of choice, yogurt, on a smoothie bowl or in handfuls as a delicious, chunky, peanut butter snack!
Freeze this Granola in an airtight container for up to 3 months. I used a glass bowl.
Alternatively, you can freeze or store individual portions in airtight plastic bags. It makes a great on-the-go snack!
