Instructions

  1. Heat oven to 350 degrees. Start the Marinara Sauce Recipe Below.

  2. Lightly pound the chicken with a wooden mallet to tenderize the chicken so each piece is the same thickness. You can alternately use split, boneless skinless chicken breasts.

  3. Heat 2-3 tablespoons of olive oil in a large saute pan over medium heat.

  4. Season chicken with garlic powder and pepper.

  5. Saute the chicken for 3 minutes on each side until lightly golden. Turn off the heat.

  6. Spoon 2 cups of marinara sauce into a large baking pan.

  7. Lay the chicken in the sauce. Generously pour additional marinara sauce over the chicken.

  8. Reserve the remaining sauce to use with pasta or at the table.

  9. Place 1-2 slices of Mozzarella over each piece of chicken.

  10. Cover the baking pan with foil and bake in a 350-degree oven for approximately 30 minutes. (Temperature Test Chicken to 165 degrees)

  11. Uncover the pan and cook until the Mozzarella cheese is melted, about 5 minutes. You can turn the oven off at this point.

  12. Remove the pan from the oven and sprinkle the chicken with freshly chopped basil and parsley.
