Creamy Chocolate Peanut Butter Chia Pudding is one of our favorite meal prep recipes! This creamy pudding is so simple to make, with only 7 ingredients. It’s healthy and delicious, and the chia seeds and peanut butter provide 8 plus grams of protein and healthy fat. Your family will love it, and it’s full of chocolaty peanut butter flavor!

Ingredients

  • 2 cups almond milk or milk of choice
  • 3 tablespoons unsweetened cocoa powder
  • 6 tablespoons chia seeds
  • 4 tablespoons maple syrup
  • 2 tablespoons creamy peanut butter
  • 1 teaspoon pure vanilla extract

Instructions

  1. Whisk together all ingredients in a large bowl. Let the chia pudding mixture rest for 10-15 minutes.
  2. After 15 minutes, add the chia mixture to a high-speed blender and blend until smooth and creamy.  *If you love the bit of crunch from chia seeds like my husband, you can skip this step.
  3. Place blended chia mixture in the refrigerator until cold and thick.
  4. Whisk in a few tablespoons of additional milk if the chia mixture is too thick.
  5. Serve in glasses or small mason jars. Top with peanut butter, dark chocolate cocoa nibs, or your favorite toppings!

Notes

  • Top with chocolate shavings, chocolate chips, peanuts or cocoa nibs
  • Delicious as a dessert with whipped cream or whipped oat milk
  • Use your favorite non-dairy milk, coconut milk or dairy milk
  • You can also make this chia pudding recipe with almond butter.
  • Creamy, natural peanut butter makes blending much easier and it’s perfect for drizzling on top!
