Delectable Burrata Salad with Multi-colored Heirloom Tomatoes paired with a Zesty Lime Vinaigrette. This simple, perfect salad is flavorful, beautiful, and deeply nutritious. Perfect for summer! 

Ingredients

    • One Large Burrata Cheese – buy the best

    • One Large Avocado

    • 4 Medium Heirloom Tomatoes – Yellow and Red

    • One Cup of Sweet Cherry Tomatoes

    • One Large English Cucumber Sliced

    • Three Fresh Limes

    • Four-Five Cups Baby Spinach or any Tender Green

    • 2 Tablespoons Lime Juice

    • 1/4 Cup Olive Oil

    • 3 Minced Garlic Cloves

    • 1 Teaspoon Salt and Pepper

    • Two Tablespoons White Wine Vinegar

How to Make Tomato and Burrata Salad Step 1Prepare the Tomatoes

Slice your tomatoes into thick slices and cut the cherry tomatoes in half. Slice the avocado and cucumbers. 

Step 2Make the Lime Vinaigrette

Add 1/4 Cup of Olive Oil, 2 Minced Garlic Cloves, Juice of One Lime, 2 Tablespoons of White Vinegar, and Salt and Pepper in a small bowl. Whisk and set aside. I recommend doubling the Vinaigrette recipe to have extra at the table.

Step 3Assemble the Salad

Place 4 cups of baby spinach in a large salad bowl. Layer the tomatoes, cucumber, avocado, and lime slices around the platter. Place 1-2 large Burrata Balls in the bowl. Cut the Burrata in half. Drizzle the Vinaigrette over all of the vegetables and the Burrata. Squeeze lime over the entire salad and add extra salt and pepper. Serve with extra limes and vinaigrette at the table.
