The BEST Creamy Boursin Cheese Pasta Recipe is easy and delicious. You bake the tomatoes and zucchini in the oven with olive oil and Boursin cheese in the oven and then toss them with your cooked pasta, adding grated parmesan. It’s hearty and full of flavor. Your family will love this easy pasta recipe! Creamy, dreamy Baked Boursin Cheese Pasta with a delicious tomato-basil mixture!

Ingredients

  • 34 pints Cherry Tomatoes
  • 12 oz. Gluten-Free or Regular Pasta
  • 34 Cloves Chopped Garlic Cloves
  • 10 Fresh Basil Leaves
  • 2 Large Zucchini
  • 34 cups Baby Spinach
  • 3 Tablespoons Olive Oil
  • 12 Whole Boursin Cheese (Garlic and Fines herbs)
  • 1 Teaspoon Fresh Cracked Pepper
  • Pasta of Choice (We used Barilla Gluten-Free Penne Pasta)
  • Optional – One cup grated parmesan cheese

Instructions

  1. Drizzle 1 Tablespoon of Olive Oil on the bottom of a 9×13 casserole dish. Add 3-4 pints of Cherry Tomatoes and three cloves of Chopped Garlic. You can more garlic or less to your taste. Add 5-6 turns of Fresh Cracked Pepper. (I omitted Salt from the recipe and would recommend salting at the end if you need it at all)
  2. Cut two zucchini in half lengthwise and then cut into half moons. Mix the Zucchini with the Tomatoes and Drizzle 1 Tablespoon of Olive Oil over all the vegetables.
  3. Place a whole Boursin Cheese in the middle. I pushed it down into the tomato mixture and drizzled olive oil. The original recipe called for two entire Boursin Cheeses, but I found one was perfect.
  4. Place in a preheated 375-degree oven and cook until the mixture is bubbling and the tomatoes are soft and bursting, about 30-40 minutes. Check often.
  5. While the Tomatoes are cooking, bring a large pot of water to a boil and add one 12 oz. package of pasta. I used Barilla Gluten Free Penne Pasta. Cook Pasta until al-dente. When the pasta was 3/4 cooked, I added 4 cups of Baby Spinach. Drain pasta and spinach and pour it into a large serving bowl. I always mix a teaspoon of olive oil with my cooked pasta to keep it from sticking.
  6. When Tomato Boursin Mixture is done, remove it from the oven and gently mix in the pasta. As pictured, I transferred this mixture to a large serving bowl and added a large handful of chopped fresh Basil. I used about 10 Basil leaves.
  7. Some people hold back some pasta water and add it to the mixture, but I found the tomatoes released enough juice to make the dish creamy.
  • If you like this dish extra cheesy, prepare it with two whole Boursins, or alternately, you can add a cupful of grated Parmesan to the finished dish.
