Put 1 cup of peeled, sliced fresh ginger in a small saucepan with 1 cup of water. Bring to a low simmer and add 1 Cup of Honey. Stir until well blended. Turn off the heat.
Let Ginger sit in the honey syrup for at least 30 minutes or longer, depending on how strong you want the ginger flavor.
