Recipe Ingredients

You’ll need the following ingredients to make this fantastic Gluten-Free Chicken Piccata.

Ingredients for Gluten-Free Chicken Piccata.
  • 2 boneless, skinless chicken breasts
  • Salt and pepper
  • ¼ cup gluten-free all-purpose flour
  • 5 tablespoons butter
  • 3 tablespoons olive oil
  • Fresh Lemon juice from ½ a lemon
  • ½ cup gluten-free chicken broth
  • ¼ cup briny capers, rinsed
  • ¼ cup fresh parsley, chopped
  • lemon slices for garnish

  • You can also purchase chicken tenders or chicken cutlets
  • You can also add a few tablespoons of dry white wine when you add the chicken broth
  • We used King Arthur All-Purpose Flour – Gluten-Free
  • If dairy-free, you can leave out the butter and replace it with olive oil or gluten-free, dairy-free butter.

How To Make Gluten-Free Chicken Piccata – Step by Step

  1. Butterfly each chicken breast on a cutting board, slicing it through so you are left with four thin pieces of chicken breast. Pat each piece of chicken with a paper towel.
  2. Salt and pepper each piece of chicken generously. Add the gluten-free flour to a shallow
    bowl, then place each piece of chicken into the bowl and coat thoroughly with the flour.
  3. Heat a large skillet over medium-high heat. Add 3 tablespoons of butter and the olive oil. Let the butter and olive oil melt together.
  4. Once the butter and olive oil are melted and bubbling, add the coated chicken breasts. Cook until golden brown on each side and the internal temperature reaches 165 degrees Fahrenheit, about 2-3 minutes per side.
  5. Remove the chicken from the pan and place on a large plate.
  6. Add the lemon juice, chicken stock, capers, and the last two tablespoons of butter to the
    pan. Scrape all the brown bits left over from the cooked chicken at the bottom of the pan and mix well with the sauce ingredients. Let the sauce simmer for a few minutes.
  7. Add the chicken back into the pan with the sauce and baste the chicken in the piccata sauce. Sprinkle the chopped parsley over the chicken. Serve with rice and enjoy!

  • The chicken can be prepared in advance, and then the sauce can be made at the serving time.

Store in the refrigerator in an airtight container for up to 4 days.

This can also be made with firm white fish, salmon, or pounded chicken thighs.
