This was way before drinking coconut water was a ‘thing! Your options to crack a coconut involve removing the husk and throwing the hard coconut shell on the street to crack it open or hitting it with a hammer. If you want to drink the coconut water first, you can pry open the soft coconut eyes and sip the sweet coconut water.

I love the taste of coconut, and when Steve and I go to Maui, I always order a Chi Chi without pineapple juice. If you haven’t ventured into Mocktails yet, a ‘Mocktail’ is a mixed non-alcoholic cocktail. On nights when you want something adult and refreshing but don’t want alcohol, it’s a lovely alternative. Mocktails are also having a ‘moment’! A lot of restaurants now offer Mocktails on their menus. I was at El Dorado Kitchen in Sonoma Saturday, and we went wine tasting before dinner. I didn’t want another glass of wine, so I ordered a Mojito Mocktail. It came to the table all fancy, and everyone wanted a taste. It was delicious!

How To Make This Easy Mocktail

  1. Blend Coconut Milk in a high-speed blender until creamy.
  2. Place 1 cup of Blended Coconut Milk, 2 Cups of Ice, 2 Tablespoons of Pure Maple Syrup, and 2 Cups of Sparkling Water with the Juice of 1/2 Lime in a Cocktail Shaker. Shake for a minute and then strain the mixture into 2 Martini Glasses.

Ingredients

  • 1 Cup Organic Coconut Milk – I used Full Fat Organic Guar Gum Free Coconut Milk
  • 2 Cups Pelligrino or any Sparkling Water – This is an excellent substitute for alcohol in this mocktail.
  • 2 cups Ice
  • 2 Tablespoons Maple Syrup – This added a warm sweetness without being overpowering
  • 1/2 Lime – juice of a fresh lime

Instructions

Buy the best coconut milk possible. I used Organic Guar Gum Free Unsweetened Coconut Milk. I blended it in a high-speed blender, so it was beautifully creamy.

Place 1 cup of Blended Coconut Milk, 2 Cups of Ice, 2 Tablespoons of Pure Maple Syrup, and 2 Cups of Sparkling Water with the Juice of 1/2 Lime in a Cocktail Shaker. Shake for a minute and then strain the mixture into 2 Martini Glasses.

Notes

    • Serve with a lime wedge and cocktail accessories.

    • Serve with fresh pineapple wedge

    • Add some decorative tropical napkins

    • Rim the glass with coconut sugar for an extra wow factor
